Spring is one of my favorite seasons for many reasons: the weather starts getting warmer, my wardrobe becomes more colorful, and the food I eat is fresher, lighter and full of Spring vegetables and fruits. Eating seasonally is not only a great way to enjoy food at peak freshness and deliciousness, but it is also more environmentally sustainable and cost-efficient. That is why I wanted to bring you a few of my favorite recipes that incorporate some of the delicious veggies and fruits harvested during Spring.
